China is known for its tea plantations and tea-drinking ceremonies. But did you know that the country have been producing coffee ever since 1902? French missionaries brought the first coffee sapling from Vietnam to Yunnan’s Binchuan county in 1902.
Yunnan’s specialty coffees have many unique qualities including nuttiness, fragrant spices, chocolate, tea and dried cherries flavor profiles. The latitudinal position of Yunnan means there are much cooler temperatures at night at higher altitudes which provides a much sweeter quality to the bean.
PROCESSING
Washed
This processing method cuts and washes off the cherry from the coffee bean and also removes as much mucilage as possible. This produces coffee with high clarity and vibrant notes. Removing all of the cherry prior to drying allows the intrinsic flavors of the bean to shine without anything holding them back. Fruit notes are still found in washed coffees, however, fermented notes and berry notes are less common.

A friend told me to try this coffee as I’ve a skin allergy from drinking coffee. I really love coffee but I’ve to ration it to only twice weekly so you can see how miserable this makes me. I still keep my espresso machine because I’m not willing to let go.
Received my pack of Snow Mountain two days ago. Drank it on the first day, no itchiness. After 1 day of break, I decided to try it again today, and still no itchiness. Maybe I’m being hopeful, but I feel it’s ok for me to drink this on a daily basis.
